Day 992 of the Adventure


Yesterday I mentioned that we were hoping to build an outdoor Summer Kitchen before the garden started producing at full speed. It looks like that is not going to happen. We may get it done but not before we have to come up with an alternative workspace for the canning operation breathing down our necks. Nearly everything we've done since our arrival here has had a deadline attached. Most of which we have failed to meet. Maybe that's not completely accurate. I guess we've met most of them but without "completing" them. The cabin is livable but not complete. The woodshed we started last fall has wood stacked in it, but is not complete. The solar plant is working, but not complete. The garden is producing wonderfully, but not complete. The Summer Kitchen is not even started.......... and it's not complete either.

Now we face a challenge of beginning the canning part of the vegetable production and find ourselves needing to scale it to our smaller cabin kitchen. Can it be done? Sorry, no choice in the matter. To save time, energy and workspace, the first batch of green beans we've been accumulating will go into the Freeze Dryer. The cucumbers on the other hand will become the trial run of the pickle canning process. I believe that will happen tomorrow. So far, our cabin has functioned as a candle shop, soap making shop, living space, butcher shop (yes, for butchering and packaging deer) vegetable and berry prep for freezing and freeze drying and I'm sure more that I'm not thinking about right now. Tomorrow, we'll be adding vegetable canning to the list.
