January 8 - The Campfire Trail - My SECRET Ingredient

January 8, 2024

Day 829 of the Adventure

I have very few "Secrets". Most of them aren't intriguing enough to even be called secrets. But there's one legitimate secret that makes the difference in a bowl of chili. It came from a friend of mine probably 40 years ago and it was a reluctant give-away. His chili always had a flavor that I could never quite pin down. He just grinned at my attempts to identify it. By the way, he also had the best recipe for brats and sour kraut too. I'll have to re-test that one again to make sure I actually remember it. As far as the chili is concerned, the secret ingredient I've been using now for 40 plus years is...........

Okay, I'll really disclose it. Instead of using any kind of tomato juice or sauce or paste, add a similar amount of Spicy V8 juice. It adds a little bit of a kick and a unique flavor you would get if trying to duplicate the taste without realizing what all was in it. PLUS. If you went here and read all of it to here, I'll toss you another tidbit of secrecy. The amount of this ingredient can overpower the chili very quickly so you need to start small and sneak up on it. Add one tablespoon of molasses. Make sure it's blended in very well before taste testing to see if you want more. It's another one of those ingredients that you can tell something different is there but just can't quite figure out what it is!

Try them both in your next batch of "secret ingredient" chili. You'll have people trying to guess what's different. It's your secret now, do with it what you want!
