Making Redbud Jelly - March 28

Day 1,274 of the Adventure


We missed the window for Redbuds last year. I had discovered that Redbud Jelly was a thing here in the Ozarks, but not soon enough to harvest the blossoms for making some before they were past the blossom stage. We had mostly forgotten about it until they started blooming once again this Spring. Dodging rainstorms, we made our way to a couple of nearby trees in the Campfire Trail woods and picked a batch of flowers. I'm not going to get too far ahead of myself with the process just yet. The first step is making a "Tea" from the flowers which takes overnight. Then the Jelly-making can commence. Watch for updates in the next couple of days.
