Part 2 of the Redbud Jelly making happened today. I'll have to admit that this was probably the easiest Jelly recipe we've ever done and tied for first with Jalapeno Jelly for uniqueness. I'm not sure what I expected but it certainly has a pleasant taste. A very light flavor and sweet. I think it's something that we will want on our Jelly shelf all the time. If nothing else than to impress our out-of-town friends with a taste of something uniquely southern when they visit us in the Ozarks. From a food preservation and practical prepping point of view, Redbud Jelly has that "Living Off the Land" vibe to it. We'll be uploading a video in the coming days with the entire process and recipe. Until then, gather you up about four cups of Redbud blossoms and store them in the refrigerator for cooking up some of your own Redbud Jelly!
