Dilly Beans are Grandkid Treats - August 1

Day 1,400 of the Adventure


We've been accumulating garden produce for a couple of weeks, and it was reaching the point where we had no more room in the refrigerator. As badly as I needed to do some electrical work for the house, Shelley over-ruled the work schedule today and we ended up doing some canning. One item was dilly beans which is something I had never heard of until a year ago or so. I discovered it's a favorite among the grandkids. Dilly Beans are just like they sound, green beans canned in dill pickle brine. In addition to the beans, we also canned up a bunch of my favorite pickled okra. Expensive to buy in the store, pickled okra is something that once a jar is opened, it rarely survives long enough to make it to the refrigerator. Okra is very prolific in the garden, and it doesn't bother me to binge out on a fresh jar of it every now and then. Finally, we also laid up some pickles. Not that we really needed any more. It's just that they are as productive as the tomatoes, beans and okra and it's hard to stay ahead of them with any level of creativity. So, we now have more than enough dill pickles to survive a respectable apocalypse. Just in case.....
