December 25 - Resort Adventures "Christmas"

Christmas Morning, 2018. Knowing that we were scheduled to cook up the Christmas Family Breakfast Tradition this year at our son's house, we were very specific on when the breakfast was to be ready. 10:00 am was the decided upon time. That meant, engineering everything in reverse, we could sleep in until 8:30, be ready to leave at 9:30 and still arrive in Galena MO by 10am. In theory, that's the way it would work. But in 'theory", theory works like practice, but in "practice", it doesn't. So...…. at 7:30am, I received a call that everyone was up so we might as well get breakfast going!

The Traditional Christmas breakfast is Mennonite Waffles. What makes a Waffle a Mennonite? That..... Is a good question! I'm not sure but it they consist of Waffles, smothered with a cream sauce, topped with a blueberry reduction, this if that wasn't enough to put you in a comma, we add a pile of whipped cream on top! (If I get enough requests for the recipe, I may post it, but I have to warn you that it may be "Confidential", "Family Secret" kind of stuff!

Now what you are looking at in the picture is the "Girlie" version which is two - quarter waffles with some stuff. The "Manly" version is two full waffles with double everything! Which covers the whole plate about three inches deep.

Wherever and whenever this tradition started, I can't remember. I can pretty much say with confidence that it will not likely die out anytime soon, or actually, ever! The kids will not let it! But that's okay. I guess as long as Mennonite Waffles are part of the Christmas tradition, then the kids will always do their best to be there

Last Christmas included a "Special" Gift that was the announcement that we would become Grandparents for the first time. Our grandson Callahan was born during the summer and has become the center of attention of the family. He's the "Ham of the Fam". He's become the official spokesman for the resorts, the coffee company, the "everything in general" face of the "Fun" part of what we do. I can't wait until we can get some good pics and video of him having fun by the pool, firepit, boats and everything else.
