Day 981 of the Adventure
We have the first results from the new Freeze Dryer now and I think I'm impressed with it. I only say "I think" because I'm still trying to get a grip on exactly what the results are supposed to be. What they look like, feel like and taste like. Freeze drying is a much more intricate process than simply drying. Both have their place I guess. Freeze drying takes the food to roughly 40 degrees below zero, then extracts the moisture out of it by vacuum pump. (in simple terms) Whatever that process does exactly, I'm not sure, but evidently it removes the moisture to the point where it can be stored for up to 25 years without losing it's nutritional value and stability. We sampled the strawberries right out of the machine and they had the texture of cheese puffs until bitten into then the original strawberry texture returned and all of the flavor said "Fresh Strawberry" I also tried reconstituting some with water and after only about 30 seconds, they had recovered their strawberry texture. The texture was more of a frozen and then thawed texture rather than fresh, but the taste was that of fresh. Blended blueberry cubes are in now and we'll see how that goes next. I can say one thing for certain though. Storage will be much simpler. We were able to reduce about three coolers full of strawberries down into a couple Mylar bags and Mason jars. They virtually have no weight to them and will store away much easier. So begins the process of food preservation. Just in time too as the garden is poised to off-load it's bounty.
